Sweet and Sour Sauce with Steamed Fish

Ingredients

Cook Rice

  • 500 g cooked basmati rice

Vegetables for sauce

  • 1 red capsicum, Seeds removed, roughly chopped
  • 1 yellow capsicum, Seeds removed, roughly chopped
  • 2 carrots, roughly chopped
  • 4 spring onions, White part initially
  • 1 tablespoon olive oil

Sauce

  • 2 tablespoons cornflour
  • 1 tablespoon tomato puree
  • 2 tablespoons soy sauce
  • 1 tablespoon hot chilli sauce, (optional)
  • 2 tablespoons white wine vinegar
  • 400 grams cold water
  • 227 g Tin, Pineapple chunks in juice, (use the juice)
  • 75 g frozen peas

Fish

  • 4 White Fish Fillets

Recipe's preparation

    Cook Rice
  1. As per Everyday Cookbook

    Place into ThermoServe to keep warm

  2. Vegetables
  3. TX - add all ingredients, 3 x Turbo

    Add splash of olive oil

    TX - saute Counter-clockwise operation/ 8 min / 100°C / speed 1

  4. Prepare fish for steaming
  5. Varoma – baking paper on top shelf

    Place fish on the baking paper

    Note: If the paper needs to take up the whole shelf put some holes in the paper to allow the steam to get through

  6. Sauce
  7. TX - Add the sauce, add pineapple and juice, add 500ml cold water

    TX – cook Counter-clockwise operation Reverse / 30 min / Varoma / speed 1

    Add peas when 2 minutes to go

  8. Steam fish over sauce
  9. Place the Varoma on once the sauce is set

    The cooking time for the sauce is the same as the fish.

Tip

Adjust cooking time of sauce to match the fish to be steamed. I used Whiting fillets which are small and thin.

Serve with rice, fish and then the sweet and sour sauce.
