Thai Fish Cakes (Tod mun pla)

  • 4 cloves garlic, peeled
  • 2 fillets basa or similar fish, cut in pieces approx 350 - 400 g total
  • 2 level tablespoons Thai red curry paste, add more to taste if required
  • 2 level tablespoons Corn Flour
  • 0.5 level teaspoons baking powder, gives that springy texture
  • 1 level teaspoons fish sauce
  • 2 level teaspoons raw sugar, or palm sugar if available
  • 1 --- egg
  • 1 level tbsp Kaffir lime leaves, shredded finely
  • 200 g green beans, cut into 1 cm pieces

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Add garlic, fish, red curry paste, egg, corn flour, baking powder, fish sauce, sugar to the bowl and blend speed 6 for 1 minute.
    Scrape down sides and check it is smooth in texture looking a bit like mashed pumpkin.
  2. Add lime leaves and beans. Mix reverse, speed 2 for 30 seconds.
    Scrape down sides and check for even distribution.
  3. Fry in a wok or fry pan a few at a time in about 2 cm of oil at low heat. Form the fish cakes with spoon or wet hands, making each about 1 heaped tablespoon in size. When they are a golden colour (about 3-5 minutes) drain on some paper towel. Continue until all mixture is used. It will make about 12 - 15 fish cakes.
    Serve with sweet chilli dipping sauce.

Use a soft fish. I found Basa to give the best results. I use the frozen fillets from the supermarket. Experiment with different types of fish if you want to try others as they give varying results.
Blending on high speed helps to aerate the mixture adding to the springy texture.
