Thai Squid curry soup

Ingredients

2 portion(s)

  • 300 g Squid tubes, score inside of tube then cut into strips
  • 20 g olive oil
  • 2 cloves garlic, peeled
  • 2 tsp red curry paste
  • 10 g nam pla (Thai fish sauce)
  • 15 g light soy sauce
  • 1 tsp raw or rapadura sugar
  • 3 small aubergines
  • 1 small red chilli, deseeded
  • 2 Kaffir lime leaves, finely sliced
  • 10 fresh basil leaves

Recipe's preparation

  1. Place garlic and chilli in TM bowl and chop for 3 seconds on speed 7, scrape down sides of bowl.

  2. Add olive oil and sauté for 2 mins at 100C on speed 2

  3. Add curry paste and sauté for 1 min at 100c on speed 2

  4. Add squid and cook for 2 mins at 100c on reverse + speed soft

  5. Add fish sauce, sugar, soy sauce and aubergines.

  6. Cook for 6 mins at 100c on reverse + speed soft

  7. Add kaffir lime leaves and basil in last 30 seconds of cooking time

  8. Add olive oil and sauté for 2 mins at 100C on speed 2

Tip

Add vermicelli rice noodles to use in the soup for a more fulfilling meal. Simply place the noodles in Thermoserver and cover with boiling water before starting at step 1.
How to prepare squid: Cut off tentacles then pull the entrails out of the sac and discard. Remove the beak and pull the quill out of the sac. Pull off the wings and scrape the purplish membrane off them and the sac. Cut the body into rings.
