Creamy Chicken and Mushroom Risotto

  • 50 g olive oil
  • 300 g chicken breast, chopped
  • 1 onion
  • 2 clove garlic
  • 100 g Swiss Brown Mushrooms, sliced
  • 400 g arborio rice
  • 50 g white wine
  • 800 g chicken stock
  • 100 g cream
  • 100 g bacon rashers

Recipe's preparation

    Creamy Chicken, Bacon and Mushroom Risotto
  1. Chop garlic, onion, mushrooms and bacon for 2-3 seconds on speed 6-7. (I put mushroom in now as I dont like it. If you like mushroom add this in when you add the chicken breast)

    Add oil and saute for 6 minutes, 100C, speed 1 with MC off.

    Add rice and wine and saute for 2 minutes, 100C, reverse and speed 1.

    Add stock, chicken, and water and cook for 16-17 minutes on 100C, reverse and speed 1.

    Stir through cream and seasonings of choice.

    Cover and stand for 5 minutes.

Tip

Use Semi Dried tomatoes as well or in place of another ingredient

    I made this and quite enjoyed it, I used 1 1/2 tablespoons of chicken stock paste and 800g of water. I also added a bit more chicken and extended the cooking time by 3 minutes. I seasoned with some cracked pepper and chopped parsley

    This recipe did not work at all for me way too much rice, mine stuck to the bottom of the thermomix and the top rice wasnt cooked! and it was very bland! I think adjustments need to be made to quatities of each ingredients!

  • Seasoning means using Salt

    Seasoning means using Salt and Pepper. I wouldn't recommend using any more Salt in this recipe. I also wouldn't saute for 6 minutes in the first step, 3 minutes is enough AND on reverse.

    Just found this recipe and it's great, apart from the fact it doesn't seem to be clear enough on the water - stock issue. 800g of Chicken Stock means she probably used liquid stock for this recipe, which is equivalent to 800g of water and probably 1-1.5 Tblsp of Chicken Stock Paste or even just the commonly used Veggie Stock Paste. I hope this clears things up a bit. Give it another go aimee and merridyC.

    This recipe was an epic fail. Hubby made it & added 200g of chicken stock. So it was so salty we couldn't eat it. I'm assuming it needed water. It also mentioned seasoning & had none in the ingredients list.  I'm very disappointed in it.  I think you need to go through & see how it could be changed,  as it certainly isn't suitable for beginners.
