Easy chicken and mushroom, chick pea ragout

  • 700 grams of chicken thighs, diced into 3cm pieces
  • 1 level tablespoon of harissa paste
  • 25 grams of olive oil
  • 1 onion, peeled and cut into quarters
  • 2 cloves of garlic, peeled
  • 1 level teaspoon of ground cinnamon
  • 1 level teaspoons of ground cumin
  • 2 level teaspoons of tumeric
  • 1 heaped tablespoon of chicken or veg stock
  • 400 mls of water
  • 400 gram can of diced tomatoes
  • 150 grams of mushrooms, sliced in half and then quartred
  • 400 gram of chick peas, drained and rinsed
  • 2 heaped dessert spoons of cornflour, mixed to a thin paste with a little water
  • small hand full of mint or parsely, to garnish

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Put your diced chicken in bowl add the Harissa paste and mix well making sure there all coated - pop in the fridge to marinade for 30 mins minimum

    Add onion and garlic to bowl chop 5 seconds, speed 5, scrape bowl

    Add oil cook 3 minutes, 100 deg, speed 1, MC off

    Add spices, around the bowl, cook 2 minutes, 100 deg, speed 1, MC off

    Add tomatoes, stock and water, chicken and mushrooms, stir with spatula, cook 14 minutes, 100deg, reverse, spoon, MC off

    Add chick peas and cornflour, cook 5 minutes, 100deg, reverse, spoon, MC off

serve with cous cous, or thick slices of crunchy bread
