Ingredients
Hidden Veg Meatballs
- 500 g mince, Meatballs
- 1/2 onion, Meatballs
- 65 g breadcrumbs, Meatballs
- 1 level tsp salt, Meatballs
- 1/4 level tsp black pepper, freshly ground, Meatballs
- 1 egg, Meatballs
- 1 level tbsp Milk, Meatballs
- 1 level tbsp Grated Parmesan Cheese, Meatballs
- 1 level tbsp parsley, Meatballs
- 2 level tbsp olive oil, Sauce
- 1 onion, peeled & halved, Sauce
- 1 garlic clove, Sauce
- 1 zucchini, Sauce
- 1 carrot, peeled & chopped, Sauce
- 1 celery stalk, chopped, Sauce
- 200 g button mushrooms, Sauce
- 2 level tbsp tomato paste, Sauce
- 700 g tomato passata, Sauce
- 300ml liquid beef stock, Sauce
- 1 level teaspoons salt, Sauce
- 1 level teaspoons sugar, Sauce
- 1/4 level tsp black pepper, freshly ground, Sauce
- 150 g Mozzarella Cheese, grated, Sauce

- Add 1/2 onion to mixing bowl, lid on
- Chop 3 seconds, speed 7, scrape down
- Add breadcrumbs, salt, pepper, egg, milk, parmesan, parsley
- Mix, 10 seconds, speed 5
- Add mince
- Mix, 15 seconds,
"Counter-clockwise operation" , speed 4
- Roll into small balls (1 tbsp each) into deep oven tray. Set aside in fridge while making sauce.
Preheat oven to 200C, fan-forced - Add onion, garlic, zucchini, carrot, celery, mushrooms
- Chop, 5 seconds, speed 6 - scrape down
- Add olive oil, saute 8 minutes, 100C, speed 1 (no MC)
- Add tomato paste, mix 10 seconds, speed 3
- Add passata, beef stock, salt, sugar, pepper
- Cook 10 minutes, 100C, speed 2
- Get the meatbals out of the fridge
- Carefully pour the sauce around/over the top of the meatballs so they are nicely nestled
- Sprinkle mozzarella on top
- Bake for 20 minutes, until golden & cooked through
- Serve with mashed poatoes, pasta, rice or crusty bread

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
