Awesome Pad Thai

Ingredients

  • 1 brown onion, approx 100gms
  • 2 cloves garlic
  • 1 --- chilli, 1-2 according to taste
  • 2 Eggs., medium-large
  • 1 litre water
  • 20 grams water, additional
  • 500 grams chicken thighs diced into 2cm pieces, Replace with TORFU for Vegetarian
  • 35 grams peanut oil/other vege oil
  • 10 grams Coriander (fresh)
  • 250 grams bean sprouts, fresh
  • 200 grams Rice noodles, Wide/thick
  • 80 grams peanuts, dry-roasted, Can leave these whole or crush if preferred on Speed 5/ 4 seconds.

Sauce Ingredients

  • 20 grams tomato sauce/ketchup
  • 20 grams soy sauce
  • 30 grams fish sauce
  • 30 grams oyster sauce
  • 90 grams Chilli Sauce (Hot or Sweet)
  • 50 grams Brown Sugar.

Recipe's preparation

    Method:
  1. * Add diced Chicken pieces to Varoma Dish, then on the Varoma tray place wet scrunched baking paper.

    * Whisk eggs with 20gms of water, then place on Varoma tray.

    * Add the 1litre of water to Closed lid.

    * Place the Varoma on the Closed lid, and cook 10 mins/ Varoma Temp/ Speed 4. Once the omlette is cooked, remove from tray roll the omlette into a tight roll, then dice in thin strips, then put aside in a thermo-server.

    * Place the Pad Thai Rice noodles into boiling water in the Closed lid, replace the Varoma Dish (with the chicken in it)back on top of the Closed lid & cook for 6 minutes/100C/Counter-clockwise operation Speed 1.

    * Check that the noodles are soft then drain. Place the noodles into the thermo-server along with the omlette strips to keep warm.

    * You will need to continue to cook the chicken for another 8 minutes or so. Check that the chicken is cooked  then add to Thermo-server.

    * Empty water from Closed lid then dry Closed lid. Add onion, garlic, coriander and chilli, on to running blades- mix Speed 5/ 4 seconds. Scrape down sides, then add oil to Closed lid without MC and saute 2minutes /Temp 90C/ Speed 2.

    * Combine the sauce ingredients into Closed lid and mix Speed 3/ 5 seconds.

    * Add to rest of ingredients along with the bean sprouts in the thermo-server.

    * Serve with peanuts over the top, along with extra coriander or parsley if preferred. ENJOY!

     

     

  2. Vegetarian Option.

    Omit the chicken and add diced Torfu, into the thermo-server with the rice noodles.

    Very tasty dish and will use again. However as my husband does not like things hot, I left the chilli out of the main and only used 80gms of sweet chilli in the sauce. Still very tasty with just a little bit of heat.

    Enjoyed making this, however my husband refuses to eat coriander so had to make it without. For a bit of greenery and extra crunch I added snow peas when I added the bean sprouts. My first time cooking omelette in the varoma and glad to have tried that, will use that one again. Thank you

    Made this for some friends. I admit that whilst making it I was a bit unsure that it was going to turn out but it was a huge hit. So much flavour and just like the takeaway version. I did end up browning the chicken and some pieces came out uncooked.

    Absolutely delicious. I fry my chicken off in a fry pan as I like the golden 'look' of it but that's the only change I make. Just put whatever veggies I have in it and always turns out great.

    Yumtown. I substituted Rice Malt Syrup (I'd run out of brown sugar), added shredded carrots and topped with a squeeze of lime juice and fried shallots. Super tasty and made loads!

    This is AMAZING!! Pad Thai is my favourite Thai dish so I was sceptical! I used half chilli & garlic sauce, half sweet chilli sauce and reduced the brown sugar to 25gms. I also used chicken breast as that was what I had in the fridge, 1/4 tsp coriander powder. The meal came together super quickly. Make this recipe, it is delicious!

    Made this tonight and loved it. My 2 year old gobbled it all up... was a Little sweet so might use hot chilli sauce instead of sweet next time but was still beautiful. Cooked the egg on the stove as I ran out of baking paper though. Def one to add to the dinner list.

    So delicious! I reduced sauce quantities a touch after reading reviews but it was amazing. It was a bit fiddly so I might do some on the stove next time and do the sauce in the thermomix. Will definitely make again

    Never had Pad Thai before so nothing to compare to but this was delicious, had to sub fish sauce with worchestshire sauce as hubby used it all and didnt replace (grrrr) and couldnt get fresh bean sprouts today (another grrrr) so had to use tin but the flavour was amazing, thanks

    Love this recipe thank you. I used 45gms hot chilli sauce and 45gms to cut down on sweetness. What I loved the mist in comparison to a stir-fried Pad Thai or a take-away one, is that this recipe has a lot less fat and doesn't have an oily taste. Will being adding to repeat list. Cheers Love

    A nice easy dinner. I added Julian cut carrots, I had no fish sauce so I subbed worcestershire sauce

    and no oyster sauce so I subbed hoisin sauce with sweet chilli sauce And a little less sugar.

    sprinkled cashews over the top to serve with a wedge of lime.

    This was a big hit with the family...especially my husband who is hard to please. Followed advice from previous comments about switching order of steps by cooking chicken for 8 minutes first and doing the 6 minute cook with noodles in the last stage which worked perfect. Reduced fish sauce to 20g and sweet chilli sauce to 75g and reduced brown sugar amount. Used 2 small teaspoons crushed chilli from a jar in replacement of chilli. Thanks for sharing ...will be making this again as all were asking for more. tmrc_emoticons.)

    I've made this a few times now and absolutely love it!  I use sweet chilli sauce so cut the sugar out.  I also steam 300g prawns in the last 8 minutes of cooking.  The rice noodles are definitely worth cooking in the last 6 minutes so you don't have to replace the water etc.  Thanks for a great recipe, perfect served with lime wedges tmrc_emoticons.)

    Nice flavour. I had difficulty getting the egg to cook in the varoma though so ended up cooking that in a pan. I found the steps a bit funny too. I found the noodles went a bit sticky in the thermoserver while you are waiting for the chicken to finish cooking for another 8 minutes. So the second time we made it, we cooked the chicken for 8 minutes and THEN added the noodles to cook for 6 mins with the chicken still cooking too, and then they were both ready at the same time. This worked better and made the dish taste nicer. But overall, great flavour. Will keep cooking this dish. Thanks.

    Fantastic recipe. We opted to cook the egg, chicken and noodles seperately on the stove then added it all to the pan with the sauce. After reading some of the reviews, we also halved the amount of fish sauce and oyster sauce, as well as only 30g of brown sugar. We also added some steamed carrot and broccoli and some baby spinach. Very nice dish and the best pad Thai meal we have made.

    i love this recipe have made it three times now and will be a regular! to up the vege content i put chopped pak choy and julienne carrots in the varoma bowl and cook the chicken on the stove and shred it in thermie before making the sauce. Didnt have brown sugar tonight so used coconut sugar and was great. I dont change things for the sake of it but after a couple of times making it i reduced the sugar to 35g as with sweet chilli sauce it was quite sweet and i think it could be reduced even more or some lime juice added to cut thru the sweetness. Also found the egg didnt cook after 10 mins, so i wonder if you need to add hot water to the bowl? still a great recipe we love the flavour tmrc_emoticons.)

    This is a no from myself and my family.  The noodles fell apart which often happens with rice noodles but the sauce was way too sweet and lacked the balance you usually find in Thai food.  It also tasted very strongly of raw onion. Thigh was the wrong cut of chicken to use as well.  No one finished their dinner and I ended up throwing the rest out. Very disappointing.
