Ingredients

TM6 – Braised Beef & Mash

  • 30 gram olive oil
  • 1 pinches salt
  • 1 pinches pepper, ground
  • 1 onion, Quartered
  • 2 cloves garlic
  • 2 carrots, roughly chopped
  • 40 grams tomato paste
  • 250 grams red wine
  • 500 grams liquid beef stock
  • 1 tablespoons Worcestershire sauce
  • 1/2 teaspoons dried thyme
  • 1 bay leaf
  • 1000 grams potatoes
  • 50 grams Butter
  • 120g Milk, Or Cream
  • 1000 grams blade roast beef, Or Chuck. Cut into 5-6cm chunks.

Recipe's preparation

    Braised Beef & Mash
  1. Sear & Flavour Base. [/b]



    Season beef with salt and pepper.



    Heat 15 g oil in a large frying pan (this step is better outside the TM6 to get proper browning – the TM6 doesn’t sear well with big pieces). Brown beef in batches, set aside.
  2. Add onion, garlic, and carrot to mixing bowl → 5 sec / speed 5[/b].
  3. Add remaining 15 g oil → sauté 5 min / 120°C / speed 1[/b]
  4. Add tomato paste → cook 2 min / 120°C / speed 1[/b].
  5. Add wine (if using) → 3 min / Varoma / speed 1[/b], measuring cup off
  6. Add stock, Worcestershire, thyme, bay leaf, and browned beef.
  7. Cook 90 min / 98°C / reverse / speed slow stir[/b], MC on.



    If beef is not tender enough, cook another 15–20 min.



    Remove thyme & bay leaf before serving.
  8. Mash in Simmering Basket[/b]


    While beef cooks, place potatoes in the Varoma dish & tray. Set Varoma in place during the last 30 min[/b] of beef cooking so potatoes steam through.



    Once cooked, transfer potatoes to clean mixing bowl.
  9. Add butter, cream/milk, salt & pepper → 20 sec / speed 4[/b], scrape down, then 20 sec / speed 4[/b] until smooth.
  10. 4. Serve[/b]


    Plate mash first, spoon braised beef and plenty of gravy over the top.

Tip

If gravy is too thin, remove beef, then simmer sauce 5–8 min / Varoma / speed 1[/b] (MC off) to reduce.



For smoothness, you can blitz the sauce without meat for 10–15 sec / speed 5[/b], then return the beef.
