Basil and Spinach Pesto Chicken
- 80 grams Parmesan cheese, cut into pieces (I use cheddar sometimes)
- 30-50 grams pine nuts, (you can use cashews or any other nuts but it will change flavour)
- 1-2 cloves garlic
- 50 grams fresh basil leaves
- 50 grams fresh spinach leaves
- 150 grams Olive Oil.
- 500 grams chicken breast, Diced
- 400 grams pasta, I use Gluten free Pasta for this
- 400 grams coconut cream

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place Cheese into mixing bowl and grate 15sec/speed 10, Place aside and use for serving on top
Add pine nuts, garlic cloves, basil leaves, spinach leaves and olive oil and chop 20 sec/speed 7
Add Chicken and cook 13-15 mins/100C/"Counter-clockwise operation" /speed 1.5
Allow to cool a little and add Coconut Cream 3 mins/"Counter-clockwise operation" / speed 1.5
Cook Pasta and serve, with cheese on top

Yum! First time cooking this. It was quick and easy. I didnt add pine nuts but it was still very delicious. Adding this to my favourites.
I used cashews and 34 of the amount of oil I fried...
I used cashews and 3/4 of the amount of oil. I fried off some zucchini sperately then added to the mixture at the end! This is the second time I've made it two nights in a row!
Made for dinner tonight with
Made for dinner tonight with a few changes. Used beef mince which I browned first.
Add 1/4 leftover tin of coconut cream with another 1/4 of a tin of water.
Used cashews and didn't use any parmesan as can't have dairy.
Served on zucchini noodles.
Overall was pleasant but nothing to rave about. Needed a lot of seasoning as it lacked a bit of flavour.
I doubled the pesto and freezing the rest for another meal.

I found this very runny,
I found this very runny, would use probably not even half the coconut cream and it needs the butterfly whisk as the chicken just gets shredded!

Delicious! We had this last night and it was lovely. Leftovers even more tasty the next day. Yes - as the other reviewers mentioned- I only used 3/4 of the recommended coconut milk. Thanks for a lovely recipe
