Caramel Chicken

Ingredients

4 portion(s)

Rice

  • 400 grams Brown OR 300g Wild Rice
  • 900 grams water

Chicken

  • 1 tablespoon peanut oil
  • 1 red onion, peeled and halved
  • 450 - 500 grams chicken breast, trimmed of fat and sliced thinly

Sauce

  • 2 tablespoons sugar
  • 2 teaspoons fish sauce
  • 2 tablespoons soy sauce

Other

  • 4-5 sprigs coriander, leaves only

Recipe's preparation

    Rice
  1. Place rice into TM basket and rinse.  (If using brown rice pre soaking it for 30 mins will make it cook faster and be easier to digest.)


     


    Brown Rice:


    Place water into mixing bowl. Insert TM basket with rice and cook for 30-35min/Varoma/speed 4.


    Wild Rice: 


    Place 300g of rice into TM basket with 1.4L water and cook 45min/Varoma/speed 2


    set aside in Thermo Server

  2. Chicken
  3. Place onion in bowl and chop 2-3secs/speed 5


    Add oil and Chicken 5mins/Varoma/speed 1 counter-clockwise operation


    Set aside 

  4. Sauce
  5. Add sugar to bowl 1min/Varoma/speed 9


    Scrape down sides  1min/Varoma/speed 1


    OR until sugar begins to brown 


    Scrape down sides and add Fish Sauce and Soy Sauce 1min/Varoma/Speed 1

  6. Combine
  7. Add chicken to sauce in TM bowl and insert butterfly 3min/Varoma/speed 1 counter-clockwise operation


     

  8. Serve
  9. Serve Chicken with Rice and top with Coriander.  Serve with Broccolini and snow peas.

Tip

While the rice is cooking steam 150-200g of fresh Vegetables in the Varoma Tray for the last 6-8mins.  I use Broccoli, Carrot and Zucchini.  Toss through chicken at end or use as a side serve.
