If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Line a 5 cup capacity deep dish.
  2. Chop cheese 17 seconds / speed 5.5. Set aside.
  3. Add capsicum, brown onion and ham. If using fresh herbs, add now to chop if you wish. Chop 15-30 seconds / speed 4, depending on how chunky you want it.
  4. Add flour, salt, pepper, parsley, oregano and most of the cheese (save some to sprinkle on top). Mix on Counter-clockwise operation speed 4 / 20 seconds. Put in the bottom of the dish.
  5. Without washing the bowl, add eggs and milk. Mix 5 seconds / speed 4.
  6. Carefully pour the egg and milk mixture over the other ingredients.
  7. Spread out sliced tomato over the top of the quiche, then sprinkle with the remainder or the cheese.
  8. Bake at 180 degrees for 40 minutes.

Tip

Gluten free flour and / or lactose free milk can be used.

Can be made vegetarian by removing ham and adding any vegetable in its place.

Any vegetables can be substituted. If using a 'wet' ingredient such as zucchini, eggplant etc, make sure to remove as much moisture as possible before adding to the quiche,

Made this for lunch today. Substituted quite a few ingredients (broccoli and asparagus instead of capsicum and tomato and served the ham separately for those who eat it) however stuck to the basic recipe and it was very well received. Very tasty and easy to make. Thank you for the recipe.
