Variation Potato and Leek Soup
- 1 leek, Roughly Chopped
- 1 Onion, medium, peeled, Roughly Chopped
- 150 grams fennel, Roughly Chopped
- 3 garlic cloves, Roughly Chopped
- 40 grams Butter
- 750 grams potatoes, Roughly Chopped
- 1 litres Liquid Chicken Stock, (or 1 litre water + 3-4 tspn stock powder)
- 150 grams coconut milk, (or 125g cubed cream cheese, or cream to taste)

- 1. Add Leek, Onion, Fennel and Garlic to bowl. Chop 5 secs, speed 5.
2. Add Butter to bowl. Cook 5 mins, speed 1, 98ºC, scraping down the sides of the bowl halfway through cooking.
3. Add Potatoes and cook another 5 mins, speed 1, 98ºC.
4. Add Stock and cook 20 mins, speed 2, 98ºC, or until potatoes are soft.
5. Puree for 60 secs by placing MC on lid and gradually increasing speed from 5 to 9, until mixture is smooth.
6. Add Coconut milk, and season with salt and pepper to taste.
7. Cook another 3 mins, 98ºC, speed 2.
Variation: Add some finely chopped ham in step 7 and use reverse blades, speed 1.5.
Potato, Leek and Fennel Soup
Tip
I often don't even peel the potatoes as the potato skin has a high nutritional content. Peeling them creates a smoother, creamier consistency but if you're not fussed by presentation and are more concerned about nutritional value then leaving the peel on is just as yummy!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
