Lower calorie bacon and zucchini Quiche

Shortcrust pastry

  • 75 g Butter - Chilled, Cubed
  • 150 g plain flour
  • 0.5 tsp salt
  • 50 g water

  • 0.5 zuchinni
  • 0.5 onion, halved
  • 20 g oil
  • 100 g bacon, thinly sliced
  • 3 eggs
  • 215 g Milk
  • 50 g grated cheese

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. Prepare the pastry

    1. Put butter, flour, salt and water in mixing bowl and mix 30 sec/speed 4, or until dough starts to come together. 

     

    2. Transfer to thermomat and work dough into a smooth ball. Be careful not to overwork it.

     

    3. Roll out using a rolling pin. Line a quiche tin (26cm max size) with the pastry. Prick the base all over with a fork, then line with baking paper and pie weights. Let rest in fridge for 20 mins.

     

    4. Preheat oven to 180c and blind bake pastry for 15-20 mins, remove weights and cook for a further 5mins.

     

     

    Prepare the filling:

    1. Add zuchinni and chop 3 sec/speed 5, transfer to a bowl and set aside.

     

    2. Put onion in mixing bowl, and chop 3 sec/speed 5

     

    3. Add oil and saute 3 min/100/Counter-clockwise operationspeed 1

     

    4. Add bacon and zucchini to mixing bowl, and cook 3 min/120/Gentle stir setting.  Drain excess liquid with aid of simmering basket. No need to wash mixing bowl.

     

     

    Prepare the Quiche:

    1.  Spread bacon and vegetbales evenly over the blind baked pastry.

     

    2. Place eggs, milk, salt and pepper to taste, in mixing bowl and mix 30 sec/speed 4.

     

    3. Pour egg mixture over bacon  and vegetables, then sprinkle top with grated cheese.

     

    4. Bake for approx 30 minutes or until golden and set.
