ONE BOWL SATAY CHICKEN with RICE NOODLES

SATAY CHICKEN WITH RICE NOODLES

  • 1 onion
  • 2 cloves garlic
  • 50 grams coconut oil
  • 1 tablespoon brown sugar
  • 50 grams Coconut Aminos
  • 1 pinch chilli powder, (Optional add more or less)
  • 1 teaspoon ground ginger
  • 1 teaspoon Chinese 5 spice
  • 100 grams Shredded coconut
  • 150 grams crunchy peanut butter
  • 4 coriander seeds
  • 70 grams Cashews, Can use peanuts/ cashews/ almonds
  • 1 can Evaporated Skim Milk, Carnation Light & Creamy
  • 1 tablespoon cornflour
  • 500 grams chicken thigh, chopped in large pieces
  • 100 grams Wombok (Chinese cabbage) finely shredded
  • 3 --- Baby Buck Choy, 3 heads
  • 1 package Rice noodles, Kantong 220g comes in a two pack bag, I only used one. Just pour boiling water over for 1 min and chop before adding to the bowl.
  • 1 Brocolli, I small head of broccoli broken into pieces removing stalk.
  • Cashews, Garnish

Recipe's preparation

    ONE BOWL
  1. ADD onion and garlic to bowl. CHOP 3 sec SP 6 SCRAPE SIDES.

    ADD 20g of coconut oil. SAUTE 2min Varoma Sp 1 MC OFF.

    ADD brown sugar, soy sauce, chilli, ginger, 5 Spice, Coconut, the other 30g coconut oil, peanut butter, coriander, cashews, skim milk, cornflour. MIX 10sec SP 5.

    ADD chicken. COOK 12min SP1 REVERSECounter-clockwise operation 100 degrees.

    ADD vegetables and noodles. COOK 6 MIN SP1 REVERSECounter-clockwise operation 100 degrees.

    GARNISH with Cashews.

Tip

I had a small brown mark on the bottom of my bowl after cooking but it came off easily with a vinegar/ water wash and light scrub.
