Fritters
- 160 grams buttermilk
- 2 eggs
- 250 grams Fresh ricotta
- 250 grams self-raising flour
- 100 grams Semi-dried tomatoes, drained
- 2 tablespoons chives
- Salt and pepper, to season
Remaining Ingredients
- olive oil
- 12 rashers rindless bacon, Halved
- 2 bunches rocket leaves

Recipe's preparation
Chop tomato and chives 3 seconds / speed 4. Set aside.
Whisk buttermilk, eggs and ricotta 5 seconds / speed 4.
Add flour, salt and pepper. Stir 10 seconds / speed 3
Add tomato and chives back in. Mix in 5 seconds / speed 1.
Heat large frying pan. Add oil. Add heaped tablespoons of mixture and cook in batches. Add more oil as required. Cook 2 to 3 minutes per side, until golden. Put on wire rack and cover.
Increase heat to high. Cook bacon 3 minutes per side, until crisp and golden.
Top fritters with rocket and bacon. Season. Serve.

Thankyou very much!!! Was looking for a last minute dinner for kids. I didn't quite have the right ingredients so I blitzed some veges instead of tomato n chives. Then my buttermilk was off (gross) so used normal milk with a squirt of lemon.
Kids thought they were getting pancakes for dinner and mowed them up! score 1 for hidden veges!
