Ingredients

Cupcake

  • 190 g plain flour
  • 1/2 level teaspoon baking powder
  • 1/4 level teaspoon bicarbonate of soda
  • 100 g vegetable oil
  • 95 g caster sugar
  • 75 g brown sugar
  • 1 tsp Vanilla Paste
  • 1 tsp Maple syrup
  • 2 eggs
  • 240 g buttermilk

Bacon Topping

  • 4 --- shortcut bacon rashers
  • 30 --- Maple syrup, 30ml to drizzle

Cream cheese frosting

  • 100 g Butter
  • 1 tsp Vanilla Bean Paste
  • 1 tsp Maple syrup
  • 250 g cream cheese
  • 100 g caster sugar

Recipe's preparation

    Cupcakes
  1. Preheat oven to 180C. Spray a 12 hole muffin tin with oil.
  2. Place flour, baking powder and baking soda in bowl and mix for 5 seconds on speed 5. Remove and set aside for later.
  3. Without cleaning bowl add caster sugar, brown sugar, vegetable oil, vanilla paste and maple syrup. Mix for 2 minutes on speed 4. Scrape down sides of bowl with spatula.
  4. Add eggs one at a time and mix for 10 seconds speed 4 after each egg addition.
  5. Add half of the flour, all of the buttermilk and then remaining flour. Mix for 15 seconds on speed 4. If there is still flour visible in the batter stir through gently with spatula.
  6. Distribute batter between muffin holes. Bake for 18-20 minutes or until a skewer comes out clean. Don't turn off oven. Place tin on cooling rack for 5 minutes. Remove cupcakes and place on rack to cool completely. While cakes are cooling cook the bacon.
  7. Maple bacon
  8. Line a baking dish with baking paper. Place bacon rashes in dish and drizzle over maple syrup. Bake for 20-25 minutes or until crispy. Set aside to cool and then break bacon into pieces. Once bacon and cupcakes are cool continue with the frosting recipe.
  9. Cream cheese frosting.
  10. Ensure bowl is clean and dry. Mill caster sugar using the icing sugar setting in manual modes.
  11. Add butter, vanilla paste and maple syrup. Mix for 1 minute on speed 4 or until light and fluffy.
  12. Add cream cheese and mix for 30 seconds on speed 4. Scrape down sides of bowl and stir remaining sugar through frosting with spatula.
  13. Spread icing on cupcakes and top with bacon pieces.

Tip

Original recipe had double the frosting, this is probably needed if you were to pipe the frosting on the cupcakes.
