Roasted rosemary, sage and orange turkey breast

  • 80 grams unsalted butter
  • 4 cloves garlic
  • 2 sprigs rosemary
  • 1 tablespoon Fresh Sage
  • 1/3 orange, rind
  • salt, to taste
  • Freshly ground black pepper, to taste
  • 1 fresh turkey breast
  • 2 stalks Celery
  • 2 carrots
  • 2 small onions

Recipe's preparation

    Orange and Herb Butter preparation
  1. 1. Preheat oven to 180 degree C

     

  2. 2. Place orange zest in bowl 10 secs/speed 9. Scrape down.

     

  3. 3. Place herbs and garlic in bowl. Chop 4 secs/speed 8.

  4. 4. Add butter, salt and pepper 20-30secs/speed 4.

     

  5. Turkey Breast preparation
  6. 1. Carefully lift skin from turkey. Rub half of seasoned butter on breast under the skin. Rub remaining butter over the skin. Season generously with salt and pepper.

  7. 2. Chop carrot, celery and onion roughly and place on baking tray. Place turkey on top.

  8. 3. Bake at 180 degrees until internal temperature reaches 70 degrees. Approx 45 mins depending on size.

  9. 4. Remove from oven when cooked. Allow to rest. Carve breast and serve with vegetable and orange and herb butter drizzled on top.
