Ingredients

Spaetzle

  • 400 grams Plain flour, Can use OO pasta flour if preferred
  • 200 grams eggs, Room temp
  • 1 teaspoon salt
  • 200 grams Milk or water, Lukewarm
  • 2 tablespoons Butter
  • 2 slices bread, Frozen then crumbed-optional
  • Large Pot of Boiling Water
  • dash nutmeg, grated, Or ground about 1 tspn

Recipe's preparation

    Dough
  1. Place flour nutmeg salt in bowl and mix briefly speed 3. Add eggs and blend speed 3 for 45 seconds. Scrape down if necessary. Set to 1-2 and pour milk thru lid till it comes together. Should be a very thick batter consistency. Adjust if necessary with more liquid or flour. Turn to Dough modeand set for 10 minutes. Remove from bowl and rest for approximately 30 minutes. Bring large pot of salted water to a rolling boil. Carefully hold above water a potato ricer or use a collander or a steamer with large holes, place a portion of the dough in and press thru.(if you are using a collander or steamer use a wooden spoon or a spatula,even a plastic pastry cutter would work, to help this process) . Cut off the dough with a knife or spatula to release if necessary. Give them a stir now and then. Noodles will float to the surface when cooked, should only take a few minutes. When all have risen remove with a sieve or a slotted spoon and plunge into a large bowl of iced water. Repeat with the rest of the dough in batches making sure the water is brought back to boiling before continuing and the collander/steamer is cold otherwise batter wil start to cook and be difficult to push thru. Remember to work fast when adding a portion. Melt butter in a pan over medium  heat until just starting to colour, throw in breadcrumbs and sauté a couple of minutes. Strain spaetzle, add to pan and heat thru.  Excellent accompiament for paprika chicken or dishes with a sauce.

Tip

Other flavours can be added, eg. Garlic or French shallots, diced speck(rendered) or add grated cheese after it has been heated for cheese spaetzle. Leftovers will keep in the fridge for 3-4 days. Not suitable for freezing. Experiment with consistency. A spaetzle press is available to make this dish but is quite difficult to find here in oz.
