Carrot Pesto

Ingredients

6 portion(s)

  • 360 g Carrots (quartered)
  • 2 sprig few oregano and rosemary leaves and thyme
  • 90 g walnuts
  • 90 g Parmesan cheese
  • 1 clove garlic
  • 50 g olive oil
  • 500 g pasta
  • salt and pepper to taste

Recipe's preparation

  1. Add all ingredients into bow, set dial to closed lid and blitz on Turbo for 1 second.  Repeat until it is pulverized. ( it took my 4 times) .

    1. Cook pasta according to packet, drain in a colander with a mug underneath to capture cooking water.  Working quickly put the pasta back into the pot and add pesto mix. Use a wooden spoon to coat the pasta and add some of the reserved cooking water to create a sauce. 
    2. Serve immediately with parmesan, feta or both.

    Hi, so glad you enjoyed it, sorry for late reply but I don't get comments unless I sign in (which isn't very often)  I don't cook the mixture in the TMX, instead after I have drained the pasta I put the carrot mix into the saucepan and put the hot pasta on top and with the heat on I stir it all through just to keep it all warm.  Yes, fresh herbs definitely enhance it but its surprising just how much flavour is in a carrot!!!!  Thanks so much for the comment.

    Hi Ebony .... this looks really nice and I want to make it tonight ! .... but it does look like you need to cook the carrot mixture at least a little bit .... can you please let us know if this is correct and update the recipe if necessary .... thanks  tmrc_emoticons.)

    This recipe is delicious !!! .... I added everything except oil and pasta and pulverised for as long as it took .... 5 seconds and pushed it down after each 1 second .... then added the oil and cooked on 100deg, Speed 2 for about 5-7 minutes .... (just cook it to your liking) ....  add some of the pasta water to Thermomix bowl and mix on Speed 3 till combined .... then put sauce in kitchen bowl and add the pasta in on top of sauce (cos it's a lot of pasta to fit into the Thermomix bowI) .... I used fettuccine cos it's what I had .... and coated the spaghetti with the sauce .... crumbled fetta on top and AMAZING !!! .... will definitely be making again !! .... I also didn't have the fresh herbs so it would be even better with them !!! .... PLUS it makes a HEAP so ideal for big families !!!

  • Not sure how I was supposed

    Not sure how I was supposed to make this.. But basically put it all in (except oul) 10 seconds speed 9, then added oil and mixed 10 seconds speed 5... Didn't cook it at all.... Had quite a gritty taste..  Don't think I will make again but nice to try something different.
