Creamy Pesto Gnocchi

Ingredients

4 portion(s)

500g Fresh Gnocchi

  • 0.5 Cup Parmesan cheese
  • 500 grams Fresh Gnocchi
  • 250 grams thickened cream
  • 70 grams tomato pesto
  • 150 grams Chargrilled capsicum
  • 150 grams baby spinach

Recipe's preparation

  1. 1. Preheat oven to 200 degrees

    2. Grate Parmesan for 30 sec, sp 8, set aside, wash and dry bowl.

    3. Chop capsicum 30 sec, sp 4. set aside wash and dry bowl.

    4. Add cream & pesto cook Varoma, 8 min Gentle stir setting

    5. Meanwhile cook gnocchi following packet directions

    6. Add Spinach and Capsicum, cook Varoma 4 min Counter-clockwise operation Gentle stir setting Might need a little stir with spatula.

    7. Combine Gnocchi and Sauce in baking dish, and back in oven for 5 minutes to melt cheese.

    One of my family's weekly favourites (toddler and fussy husband) . So quick and easy, I put capsicum in the air fryer to roast...even quicker. Also I serve with crusty dinner rolls and butter! Definitely a winner!

    yum!!!Only thought, is that cooking the cream and pesto for 8min then 4min (with spinach and capsicum) was a bit too long and left burnt cream at the base of the bowl. Will probably shorten the first round of cooking to maybe 5mins??
