Lentil and Walnut Balls

Ingredients

  • 1 stick celery, chopped
  • 1 medium to large carrot, washed and trimmed and cut in 4cm
  • 1 onion, large, quartered
  • 1 clove garlic fresh
  • 2 eggs
  • 50 grams Walnuts or Pecans
  • 430g can Sanitarium Savoury Brown Lentils, (drain juice off)
  • 150 grams dry breadcrumbs
  • Mixed fresh herbs, to taste
  • pinch salt

Recipe's preparation

  1. Place onion, garlic, celery, carrot and nuts in TM and chop for 5 seconds on speed 7.

  2. Add eggs, lentils, herbs, salt and breadcrumbs and combine for 30seconds on Reverse on speed 5.

  3. Form into balls and drop into hot oil and deep fry. Alternatively form patties by hand and fry on both sides until browned in an oiled pan.

    Delicious! I made these for my vegetarian daughter and daughter-in-law but the non vegetarians in the family were doing their best to eat them all. They go very well with mint yogurt (handful of fresh mint, teaspoon of sugar and 250g plain yoghurt. Mix mint and sugar on 6 for 10 sec, add yoghurt and mix on 5 for 5 sec.)

    I made these into patties and they were yummy but I felt just a little dry so would go better with a bit of sauce on top. Would definitely make them again though.

    tmrc_emoticons.)Looks yummy, i going to enjoy making this recipe. Have always enjoyed using sanitarium ingredience. used this recipe on on the weekend was great with a tomato and basil sauce poured over it and baked in the oven, will use greated cheese on top next time.

    Delicious! Instead of normal breadcrumbs I used Tandaco stuffing mix (whole packet), add a tbs or so of tomato paste/pizza sauce, addition 50g raw cashews and shallow fry in garlic oil.
