  • 8 cloves garlic
  • 400 grams mushrooms
  • 100 grams rock salt
  • 30 grams oil

Recipe's preparation

    Mushroom stock
  1. Chop everything except the rock salt and oil on speed 6 for 20 seconds

  2. Add rock salt and oil and cook Varoma 20 minutes speed 1

  3. Increase speed slowly to speed 9 for 20 seconds, then store in a jar in the fridge for up to 3 months

Tip

You can add the rind of parmesan to the raw vegetables. Pull it out before pulverising as it doesntgrind down smoothly once it has cooked but it adds a lively flavour. This is great in mushroom soup or mushroom rissotto. I have also added up to 100 grams of herbs (parsley, or tarragon).
