Pasta with Mushrooms

  • 400 grams fettuccine pasta, or pasta of choice
  • 50 grams Parmesan cheese, 3cm cubes
  • 20 grams basil, leaves only
  • 1 red chilli, seeded and roughly chopped
  • 1 garlic clove, peeled
  • 40 grams Butter, in pieces
  • 400 grams Mushrooms (such as button or brown), sliced
  • 100 grams water
  • 1 teaspoon Vegetable stock paste
  • 175 grams cream
  • 40 grams lemon juice
  • Salt & Pepper, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pasta with Mushrooms
  1. Cook pasta your preferred way.
  2. While pasta is cooking, add parmesan cheese to mixing bowl and grate for 10 seconds/speed 9, then set aside.
  3. Rinse and dry mixing bowl.
  4. Place basil leaves into mixing bowl and chop 3 seconds/speed 8, then set aside.
  5. Add chilli and garlic to mixing bowl and chop for 4 seconds/speed 7.
  6. Scrape down sides of bowl and add butter to chilli and garlic and saute for 3 minutes/Varoma/Speed 1/MC off.
  7. Add mushrooms and cook for 3 minutes/100 degrees/Reverse/Speed 1/MC off.
  8. Scrape down sides of bowl and add water, vegetable stock, cream and lemon juice and cook for a further 5 minutes/100 degrees/Reverse/Speed 1/MC off.
  9. Once your pasta has cooked, toss with mushroom sauce, parmesan, basil, salt and pepper. Serve immediately.

Tip

You could serve with Zucchini Noodles.

Some chicken would also work in this dish.

    This was really yummy, and easy. Always love fresh herbs from the garden 😁. I added a left over cooked gourmet sausage, and avocado. Used sweet paprika instead of chilli. I kinda ad-hoc-ed to cook for one 👌🏼

    This was very easy to make and was delicious! My vegetarian daughter loved it and I will definitely make it again. I'm not a fan of basil and she is not a fan of Parmesan but I added the quantities stated and neither was overpowering, just lovely.
