  • This is a great dish - some

This is a great dish - some additions if it's any help...

we added some thyme to the roast sweet potatoes

we also cooked the lentil dish for 30 minutes and it came out pretty mushy.   We cooked the lentils from scratch.  It still tasted great and complemented the dish well but I'd perhaps cook the dish on reverse next time.

We also used a juice of a lemon / oil / garlic / sugar / salt pepper dressing and this really added a lot more complexity to the dish and the freshness of the lemon seemed to work well against the oregano / parsley of the lentils and the aromatic nature of the thyme / sweet potato.

All up a nice dish - thanks a lot.

  • Nice! I used a tin of lentils

Nice! I used a tin of lentils and only 200g of water so I didn't have to cook it as long (about 15 minutes, while the sweet potato was cooking). Thanks  tmrc_emoticons.)
