Cannelloni with Tuna Filling

Ingredients

Tuna Filling

  • 420 g tin of tuna, drained
  • 2 hard-boiled eggs, peeled
  • 1 cup --- frozen peas & corn
  • 300 g Butter, softened
  • 250 g Cannelloni tubes

Sauce

  • 2 cloves garlic
  • 1 onion, halved
  • 25 g extra virgin olive oil
  • 800 g Tinned Diced Tomatoes
  • dried or fresh herbs, to taste, (I used parsley & marjoram, Yum!)

Topping

  • extra virgin olive oil, to drizzle
  • 1/2 cup breadcrumbs
  • Grated Cheese (Optional)

Recipe's preparation

    Prepare Filling
  1. Place tuna, eggs, peas & corn, and butter into TM mixing bowl, and mix for approx. 30 sec/speed 3, or until combined and smooth.  Set aside.

  2. Prepare Sauce
  3. Place garlic & onion into TM mixing bowl, and chop for 3 sec / speed 7. Scrape down sides, and add oil, then saute for 3 min / Varoma / speed 1.  Add tomatoes & herbs, and cook for 10 mins / 100 deg / speed 3.   

  4. While sauce is cooking, fill your canneloni tubes - if you have a quick & easy way to do this, please share in comments below!  I used a teaspoon to push it repeatedly into the tube until full.  

  5. Assembly
  6. Prepare your pan/dish  (I used a roasting pan - perfect size for two rows of approx. 10-12 tubes each)  -  drizzle some olive oil in your pan, then a light sprinkle of breadcrumbs.

  7. Lay the filled tubes into your dish, then pour the sauce over them, making sure all parts are covered.

    Sprinkle breadcrumbs over the top, and add some grated cheese if desired.

  8. Cook for approx. 30 mins in moderate/hot oven (180-200 deg), or until topping is golden brown and cannelloni is softened.

Tip

Serve with a salad or on its own.  This is a very kid-friendly recipe, and the flavours are just delicious!  My kids asked for seconds, and for it to go on the meal planner for next week!  Yippee, it's a winner!
