Chorizo Risotto (Clone of Chicken and Chorizo Arrabbiata Risotto)

  • 50 g Parmesan cheese, grated
  • 1 onion, peeled & halved
  • 1 heaped tablespoon Garlic & Olive Oil Mix
  • 50 g olive oil
  • 1 chorizo sausage, cut lengthways, then sliced
  • 300 g arborio rice
  • 100 g white wine
  • 400 g Tinned Diced Tomatoes
  • 1/2 tsp chilli flakes
  • 1/2 tsp Oregano, (dried)
  • pinch sea salt and cracked black pepper
  • 1 cube Stock Concentrate
  • 250 g water
  • 40 g pitted kalamatta olives, halved

Recipe's preparation

    Method
  1. Place onion, and garlic in bowl and chop 3 sec/speed 6.

  2. Add oil and chorizo and sauté for 2 min/100C/ReverseCounter-clockwise operation/speed 1 with MC off.

  3. Insert Butterfly.  Add rice and wine into bowl and sauté for 2 min/100C/ReverseCounter-clockwise operation/speed softGentle stir setting

  4. Add diced tomatoeschillioreganosalt and pepper and simmer 8min/100C/ReverseCounter-clockwise operation/speed softGentle stir setting

  5. Add stockwater, and olives and cook for 10 min/ 100C/ReverseCounter-clockwise operation/speed softGentle stir setting

  6. Pour into Thermo Server, stir through parmesan and allow to sit for 5min.

Tip

For EXTRA flavour and creamy texture, add 40 grams salted butter to last step!

    Delicious! I added frozen spinach and mushrooms before the final 10 min cooking time. Usee store bought stock and used same stock instead of wine. Added 100g cream on speed 1 reverse 1 min for creaminess and was wonderful!!!

    Omg yummmm I didn't add wine as I didn't have any and I used the home made veggie stock & added a bit of butter at the end into the thermoserver... Soooo Good.. Thanks for sharing 😊😊

    My 6 year old and 9 year old absolutely loved this- so did hubby.  I used x 2 Chorizo's instead of just one. I also omitted the olives & chilli. I used x1 tavlespoon of TM veggie stock. I also pulled out butterfly and cooked on reverse speed stir gently.

    Nice, easy risotto. I was cooking for just 2 of us so halved the recipe (except still used full chorizo) and dropped a few minutes off the cooking time. I didn't have any olives but added a bit of feta in the last minute of cooking. Thanks for sharing the recipe

    I made this tonight and it was an absolute winner with everyone. Used 2 chorizos and also used white wine vinegar instead of wine as didnt have any wine and added butter as suggested. I also wasnt able to get the butterfly to stay in so cooked on reverse, speed 2. Turned out perfect.
