Garlic Chicken, Pumpkin & Spinach Risotto

  • 300 g pumpkin, Diced
  • 70 g Parmesan cheese
  • 1/4 brown onion
  • 3 cloves garlic
  • 40 g olive oil
  • 40 g Butter
  • 900 g water
  • 350 g arborio rice
  • 500 g chicken breast or thigh, Diced
  • 2 tbsp Chicken Stock Paste or Powder
  • 2 handfuls of baby spinach
  • salt & pepper, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Roast diced pumpkin until cooked through (l spray with cooking spray and sprinkle with salt).

    2. Place Parmesan Cheese into TM Bowl and grate 5sec/Sp9 set aside.

    3. Place Onion and Garlic into TM Bowl, chop 3sec/Sp5.  Scrape down sides of bowl.

    4. Add Olive Oil and Butter and saute 3min/100deg/Sp1.

    5. Insert Butterfly whisk.  Add Rice and 50g of the water, saute 2min/100deg/Counter-clockwise operation/Sp1.

    6. Add remaining Water, Stock Paste and Chicken and cook 18min/100deg/Counter-clockwise operation/Gentle stir setting. Replace MC with simmering basket.

    7. Place Baby Spinach and Roasted Pumpkin in thermoserver.  Pour over Risotto, sprinkle with Parmesan Cheese, stir gently to combine.

    This is a great recipe. I added some white wine in lieu of some of the water and also just steamed the pumpkin in the microwave due to time restraints. It was all fine. Will definitely make again.

    This was absolutely amazing, everyone loved it and even better the next day. I added mushrooms and used TM vegie stock as I didnt have any chicken stock. Will be a regular in this household.

    Great recipe, thank you for sharing. it will be a regular in my house. have made it a few times now, sometimes I use 50grams of white wine instead of water when sauté the onion and garlic which is lovely then only 850grams of water for the remainder of the recipe. All other steps remain the same, it's a winner!

    Nice and easy. I steamed the pumpkin and added it in when I added the chicken, that way it blended into rice and kids couldn't pick it out. Very tasty.

    So yummy!!!! Easy to make and so full of flavours. Hubby loved it as well. I used vegetable stock in mine as I didn't have chicken stock, tasted great!!! Also I let it sit in the thermoserver for about 10 mins just to soak up some liquids. Oops hubby's gone back for seconds
