Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place water in mixing bowl, add sweet potatoes to simmering basket and place in TMX bowl with lid on. Steam 20mins/varoma/speed 2 or until soft.
Remove potatoes and allow to drain and cool to room temp (or put in fridge for 20 mins)
Place sweet potatoes in mixing bowl and add egg, salt to taste and herbs if using. mash 10 sec/speed 3
With blades spinning at speed 2, add flours through lid 1 tbsp at a time until the dough comes together. It must still be soft but malleable and dry to touch (slightly sticky- see photo)
Scoop 1/6 of the mixture onto a lightly floured surface and roll into 25cm snake, about 2cm thick. Cut snake into 2.5cm pieces then shape by rolling each piece over the prongs of a fork (this is the same preparation method as the gnocchi recipe uses in the Basic Cookbook). Set aside on lightly floured surface.
Drop gnocchi into pot of salted boiling water and cook until they all bounce back to the surface (approx 45 seconds) Serve immediately with sauce stirred though

Tip
(optional* depending on what sauce you make, if a subtler sauce like sage butter, add lots of herbs- sage, thyme, rosemary etc. I add dried Italian herbs if doing a bolognese sauce. Leave seasoning out if sauce has a strong flavour like pesto)
This is delicious with bolognese sauce or basil and spinach pesto. Great for kids too!
store any unsed raw mixture in the fridge, rolled into a thick sausage and wrapped in cling wrap for up to 2 days.

Loved this! I served it with a batch of macadamia pesto and some bacon stired through. Next time I think I will cut them a little smaller so ensure even cooking. Thanks for sharing!!!
