Hearty Mince and Macaroni Casserole

  • 50 grams Parmesan cheese, 3cm pieces
  • 1 onion, In halves
  • 1 green capsicum, Cut into eight
  • 2 cloves garlic, Peeled
  • 30 grams Butter
  • 130 grams tomato paste
  • 250 grams Macaroni Pasta, Dried, not cooked
  • 300 grams sour cream
  • 500 grams Beef mince

Recipe's preparation

  1. Heat fan forced oven to 180 degrees.
    Please note that all of the below steps have the measuring cup in the lid.
  2. Grate Parmesan cheese in bowl - 10 Seconds/Speed 9. Place grated Parmesan cheese into separate bowl and set aside. Clean and dry mixing bowl.
  3. Place onion, green capsicum and garlic into bowl. Chop for 3 seconds/Speed 4.5.
    Add butter & sauté for 3 minutes/120 degrees//speed 1.
  4. Add mince and tomato paste, season with salt & pepper. Break up mince with spatula and cook 10 minutes/100 degrees//speed 1.
  5. Add sour cream and dried macaroni. Stir with spatula. Cook for 20 minutes/100 degrees//speed 1.
  6. Pour into oven dish (lasagna type dish works fine), sprinkle Parmesan cheese on top. Bake in oven for approx 10 minutes or until top is golden. Enjoy!

Tip

This is an old family favorite, that I have converted to the thermie. Such an easy and cheap dish to make that is bursting with flavor. Any dish where you add the dried pasta straight in too is a win with me, so I incorporated this into this conversion!
