Matts Chorizo Penne Pasta

Ingredients

  • 80 g Parmesan cheese, cubed
  • 1 bunch basil, or parsley
  • 2 cloves garlic
  • 1 onion, halved
  • 2 chorizo sausages, sliced into 4cm peices (approx 210g)
  • 1-2 red long chilies, (optional)
  • 50 g olive oil
  • 400g can diced tomatoes
  • 100 g white wine, dry
  • 380 g Penne Pasta
  • 2 tablespoon TM veg stock
  • 500 g water
  • 50 g tomato paste concentrate
  • 200g jar sliced Kalamata olives, drained

Recipe's preparation

  1. 1. Add parmesan to TM bowl and grate for 10sec /speed 8. Set aside

    2. Add basil/ parsley to TM bowl and chop 4 sec/ speed 6. Set aside

    3. Add chorizo pieces to TM bowl and mince for 5-7 sec/ speed 6. Set aside

    4. Add garlic, onion, chillies to TM bowl and chop for 3 sec/ speed 7

    5. Add oil and saute 3min/ Varoma Temp/ speed 1

    6. Add stock, tomatoes, tomato paste, water and wine and cook for 10min/ 100C/ speed 1

    7. Add pasta, minced chorizo, and drained olives and cook for 10-13min/ 100C/ reverse / Counter-clockwise operation.

    Cooking time depends on the type of pasta used - check recommended cooking time on pasta packet. When adding pasta use the spatula to push it down into the sauce so it is covered before you start cooking

    8. Serve with basil and parmesan stired through

    What speed, please? I'm assuming Gentle stir setting which is what I did (but I needed to extend the cooking time an extra 2 minutes) absoluytely loved the flavours

    Lovely Dish. Thank you for the recipe. The whole family loved it, even fussy teenagers. Used only 1 chilli, for perfect amount of spice and pre-sliced chorizo for ease. Enough left over for my lunch tomorrow. Will definitely make again.

    This was very tasty. I used three chorizo sausages, had run out of veg stock paste (disaster, I know) so used a beef stock cube, dried Italian herbs instead of the fresh herbs and it was great. I needed to cook the pasta a couple of minutes longer than what the box said, but that's easy to test. Thank you!

    Chorizo pasta is a favourite of my family. Meals are judged by cook again and not cook again. Made this recipe last night and it is definetly cook again. Absolutely delicious.  A new favourite.  I did cook the pasta separately on stove and sauce in Thermomix.

    Hi Kim, That should work no problem at all. I have made it this way before and just sliced the chorizo in half lengthways first then sliced each length into thin pieces. You can follow the method the same otherwise tmrc_emoticons.)

    Thanks for creating & sharing this recipe. I have made this countless times over the past year when wanting to prepare a quick & easy "one pot" meal. It is a flexible recipe base for adding ingredients such as zucchini, carrot, spinach or capsicum. i dont usually have tomato paste, so use pasta sauce instead. ive even had to substitute the chorizo for ham or cooked lamb sausage before & surprisingly, it has still been very tasty. different brands of penne require a few extra minutes cooking time.  Big Smile

    Hi, Im so glad you enjoyed the recipe! My husband created this dish and its one of his favourites tmrc_emoticons.)

    Thank you so much for your suggestion. I think it is probably a good idea to increase the time to caramelise the onion and garlic longer. I've checked the recipes from head office and its best to have it saute for 3min/varoma temp/ speed 1 which i will update in the recipe. The 2 min is enough to release the flavour in the oil and will still continue to cook in the dish but if you want it more sauteed you can cook it for longer to your preference.

    The time it takes to heat up will fluctuate from time to time depending on a few factors like the temp of your bowl, temp of ingredients etc so it may heat up quicker one time and take a bit longer the next.

    Hi - this was lovely, but I have a little query that I hope you can help me with.  

    Step 5 says 'Add oil, saute 2mins/100 C/Speed 1'

    I set the temp to 100, timer to 2mins and speed to 1.  After 2 mins, the temp had not reached 100C, so I was a little unsure about whether I should have pre-heated the TM to 100C (if so, how do I do that?) because obviously the garlic, onions & chillies would not have sauteed at 100C.  

    What I did was re-set it to 100C/2mins/Speed 1, by which time the oil had reached 100C.

    Hope you can give me some advice  tmrc_emoticons.~

    Very tasty! I omitted the chilli (would probably add it next time), reduced the olives to 100g and only used 300g pasta... I still found that I needed to add more water to get it to cook though. I used an odd type of pasta from a little Italian grocer and the cooking time said 18 minutes so that's probably why tmrc_emoticons.) I had run out of fresh herbs so used some dried basil. I will reduce the stock paste quantity next time. A very impressive, quick, tasty dish. Thanks!

    I made the mistake of putting the chorizo'basil,parsley,cheese together, then dumped it all in to the bowl at the chorizo stage, before realising i had stuffed it up.

    but i was pleasently surprised, it turned out fantastic.  An excellent recipe.
