Nonna's Bolognese Sauce

Ingredients

  • 500 grams Beef Steak, cubed
  • 500 grams Port Steak, cubed
  • 1 Onion, medium, peeled
  • 110 grams white wine
  • 650 grams Tomato purée (passata)
  • 85 grams tomato paste
  • 50 grams Exra Virgin Olive Oil
  • Salt and pepper
  • 30 grams Butter

Recipe's preparation

  1. Mince beef and pork for 10 seconds, speed 8. Set aside.

    Place Onion and Garlic in Bowl, chop for 2 - 3 seconds, speed 6.

    Add Extra Virgin Olive Oil and Wine, saute on Varoma, 5 minutes, Gentle stir setting.

    Add the Minced Meat, Tomato Puree, Tomato Paste, Salt and Pepper into the Bowl. Cook on 100 degrees, 50 minutes, Counter-clockwise operation, Gentle stir setting.

    Once cook, add the butter and let it melt. (That is the secret)

    Add to cooked pasta as in the Everyday Cookbook.

    An excellent recipe.

    I think it could be improved by taking the MC out and putting the steaming basket on top.

    I felt that more moisture needed to be evaporated from the sauce.

    I agree with the comments on the mince - in my case the store bought mince was much too fine/small and a coarser mince is much better.

    First time making my own mince, can't believe how easy the TM makes it! Sauce was nice, would add more tomato, garlic and some herbs next time, but would definitely base it on this recipe. Thank you for sharing.

    Only had beef and took me a while to pick all the sinew out but it was worth it. Really yummy. You're right! The butter does make it!
