Prawn & Spinach Risotto

  • 1 Handful baby spinach
  • 1 cup peas
  • 50 grams grated parmasan
  • 3 Spring onions chopped

Risotto

  • 1 brown onion, Halved
  • 3 cloves garlic
  • 40 grams Butter
  • 30 grams olive oil
  • 320 grams Aborio Rice
  • 60 grams white wine
  • 2 tablespoons Veg Stock Paste
  • 650 grams water
  • 300 grams green prawns, Peeled

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Place in Thermoserver
  1. Parmasen cheese grated 10secs speed 8, baby spinach leaves, peas, spring onions - set aside.

  2. 1. Place onion & garlic cloves in bowl, chop 4secs speed 5. Scrape down sides.

    2. Add oil & butter, sauté 2mins Veroma, speed 1 No MC.

    3. Insert butterfly, add rice & cook 1min 120degrees reverse, no MC. Scrape sides and mix rice at bottom so it doesn't stick.

    4. Add wine and cook 2min, Veroma reverse speed , no MC. Scrape & mix again

    5. Add stock paste, water, prawns. Mix a bit with spatula. Cook 13 mins, 100 degrees, reverse, speed 1.5 - insert simmering basket on lid. 

    6. Pour into Thermoserver on top of other ingredients, mix thouroughly. Place lid on & let sit for 2mins, add 100ml cream (optional) and combine, leave to stand with lid on for 5mins. Serve and enjoy!

    Really good risotto. Put a bit more white wine in than suggested and reduced water to make up total volume. Added kalamata olives and basil at end. Dollop sour cream on top rather than mixed through. Was delicious.

    We made this for dinner last night and we both really enjoyed it.  We added a couple of strands of saffron & about 2 teaspoons chopped chilli in step 5 which resulted in a lovely flavour and the texture was very nice.
