seriously creamy chicken and bacon fettucine

Ingredients

4 portion(s)

pasta

  • 50 g parmesan cubed
  • 100 g bacon, diced pan fried
  • 300-400 g fettucine Pasta, cooked as per edc
  • 1 clove garlic
  • 80 g Butter
  • 20 g plain flour
  • 100 g white wine
  • 100 g water
  • 20 g chicken stock, quriky cooking
  • 250 g Chicken Breast Cubed, around two breast
  • 200 g Pouring Cream

Recipe's preparation

    pre cooking steps
  1. grate parmesan 10 sec/ speed 9  set aside

     

  2. dice bacon and pan fry (gives extra flavour )

  3. prepare pasta as per edc instructions set aside in thermoserver

  4. Sauce
  5.  to peel garlic 5sec /Counter-clockwise operation/ speed 5 pick out skins

    chop 5 sec/speed 5

  6. add butter 1 minute / temp 100 / speed 1

  7. add flour 1 minute / temp 100 / speed 1

  8. add bacon, wine, water ,chicken stock and chicken breast cook 5 minutes / temp 100/ speed 2

  9. add cream 7-10 minutes / temp 80 /speed2

  10. add sauce to pasta in thermo server stir to combine and serve with parmesan sprinkled on top

    Been struggling to get my son to eat dairy and he gobbled this all up.

    I sauteed the bacon with the garlic for 5 mins and i cooked on reverse with the simmering basket on top instead of the mc.

    In the last 1.30mins i added the parmasen and 1tsp of cornflour!!

    Delicious!!

    Oh sweet baby jeebus this is good! Doubled recipe & made a some changes: sautéed bacon with the garlic for 4mins, added flour & cooked off for 2mins, added everything else (minus cream) for 10mins 100 degrees Counter-clockwise operation sp 1.5, added cream MC OFF 10mins 100 degrees Counter-clockwise operation sp 1.5, thickened with a cornflour slurry. Served with steamed sweet potato, pumpkin, carrots, corn on the cob and snow peas. The rest is being frozen in batches ready for pies, vol-au-vants or to serve with pasta.

    so far not impressed with cooking times, my chicken was still raw when i went to take it out, so still cooking away, smells good though..

    SOOOO.... once it was cooked it was thick and creamy, but a little soo sickly for me, a small amount was okay, but then got to the sickly point...

    Wow, this is delicious! I've just finished making it for dinner tomorrow night (I think pasta sauces are always nicer the next day  tmrc_emoticons.) ) and after licking the spoon, it might not last til then!

    I tweaked it quite a bit just to get a sauce that I wanted - I used 75g of Parmesan which I stirred through at the end, completely omitted the chicken, threw in an extra clove of garlic (with a cold-ridden family I think we need it!) and I didn't pan fry the bacon because it would be cooking all on it's own without any chicken. I followed the cooking times and it worked perfectly. 

    This one will definitely be used again and again.

    awesome meal, made a few alterations very similar to JasmyneW. Omitted the wine, doubled the water, used veggie stock from EDC, threw in a good handful if baby spinach with 2 minutes to go. From step 7, I cooked on reverse as I didn't want my chicken & bacon chomped up. Kids adored this, much tastier than I thought it would be. Yummy comfort food. Thanks for sharing

    My first ever complete family dinner cooked in the tmx and everyone loved it!

    I omitted the wine and doubled the water content, used vege stock paste in place of chicken stock, added the bacon at step 8 instead of step 7 and for step 8 used reverse. I also added baby spinach in the last couple of minutes. I also used more chicken...around 500-600gms in total and that worked just fine.

    Very good. Thanks. I substituted cooked chicken in the last two mins of cooking time  and deleted the wine which worked well as i figured that the chicken didn't need to be cooked. I also used EDC vegetable stock which was in my pantry. Served it with chopped chives and steamed broccoli to counteract the saltiness (only the  adults appreciated this).  tmrc_emoticons.)

    I made this a substituted spinach instead of chicken. I used 1x 250g packet of frozen spinach. Instead of cream I used the Philadelphia cooking cream substitute and added a tablespoon more flour as the spinach can add more water.  Worked a treat. Quite creamy but yum.
