Spaghetti Carbonara
- 2 cloves garlic
- 30 grams onion
- 200 grams bacon
- 20 grams olive oil
- 90 grams parmesan, pre-grated or 2-3cm pieces
- 3 eggs

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation
- Add garlic, onion and bacon to bowl
- Chop 3 seconds Speed 5
- Add olive oil
- Saute 5 mins 120°C
"Counter-clockwise operation" Speed 1
- Place in thermo server or large serving bowl
- Wash and dry TM jug
- Add parmesan cheese to bowl
- Grate for 10 seconds on speed 10
- Add eggs, pepper and 1/4 tsp of salt
- Mix 15 seconds on speed 4
- Add egg mix to same bowl as onion mix
- Place 1200 gm water in jug (Hot or boiling water speeds things up)
- Add remaining salt
"Kettle" Bring to boil 100 °C Stop when it reaches temp.
- With MC off, add in spaghetti through hole
- Cook 10 mins 100°C
"Counter-clockwise operation" Speed 1
- When cooked, pour some cooking water into MC and set aside
- Drain spaghetti using varoma dish or colander
- Add spaghetti and reserved cooking water to bowl with egg mix and onion and toss to combine.
- Enjoy!

Tip
If you have pregrated parmesan, you can skip the proper bowl washing and cheese grating steps, and just give the jug a quick rinse out with tap water to cool it down before adding the eggs in.
If you want to add grated parmesan cheese when serving, add in a bit extra when grating and then take some out before adding the eggs.
If you like uniformly chopped/diced bacon, do that by hand and add to the onions & garlic after they've been chopped.
The addition of cooking water at the end helps make the sauce a little creamier, so add as much or as little as you like. I usually add about 1/2 an MC (50-60gm).
Pasta cooking time is based on just regular dried packet spaghetti. If the cooking time on your packet is different, adjust your cooking time accordingly.
