Creamy Spinach Pasta Sause
- 3 --- shallots chopped
- 200 grams water
- 2 heaped tablespoons Chopped chives, Dried or fresh
- 2 Chicken stock cubes or powdered stock equivilant
- 40 grams Butter
- 250 grams packet of frozen spinach, defrosted
- 250 grams sour cream
- 100 grams pure cream
Pasta and Garnishing
- 500g pasta of choice
- 4 slices bacon (optional), chopped and cooked

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
1. Blitz Shallots 4sec/speed 5. Scrape down
2. Add water, chicken stock, chives and butter
3. Cook for 6min/100'/spped 1 till boiling
4. Add defrosted spinach and break up slighly with spatular. cook for 10min/100'/"Counter-clockwise operation" /speed 1. MC on slant
5. Add sour cream and cream. cook 5min/80'/"Counter-clockwise operation" speed 1
6. Meanwhile cook pasta and fry off bacon
7. pour spinach sauce onto cooked pasta and combind. Top with bacon.

Would this work with fresh spinach?
I thought this was nice, but
I thought this was nice, but was just missing a little something when we had it the other night. I added some Parmesan to the leftovers and it was even better!!
