Capsicum & Mushroom Gnocchi

  • 2 cloves garlic
  • 1 carrot
  • small bunch parsley, Or 2 teaspoons of dried parlsey
  • 1 large capsicum sliced
  • 200 g sliced mushrooms
  • 1 tablespoon vege stock
  • 400 g diced tin tomatoes
  • 200 g coconut cream
  • 200 g gnocchi
  • 300 g water
  • salt to taste
  • 20 g olive oil

Recipe's preparation

  1. Place carrot, garlic and parsley in TM bowl and chop for 5 sec on speed 7.

    Add sliced capsicum.

    [size= small]Add oil and sauté for 5 [/size][size= small] minutes at 100 degrees on speed 1 on REVERSE.[/size]

    Add tomatoes, mushrooms, water, coconut cream, salt and stock and cook for 13 minutes at 100 degrees on speed 1.

    Add gnocchi and cook for 2.5 minutes on 100 degrees REVERSE speed soft.

Tip

You can add any left over cooked meat you have in the fridge, I added pork strip's as seen in the photo
