Variation Risotto Arrabbiata
- 50g Parmesan cheese, cubed
- 150g bacon, chopped
- 2 chorizo, sliced
- 800g tin diced tomatoes
- 3 garlic cloves,crushed
- 1 teaspoon dried chilli flakes
- 1 teaspoon oregano (dried)
- salt and pepper to taste
- 50g Baby spinach, chopped
- 1 Onion, peeled and halved
- 1 zucchini, chopped
- 1 carrot, chopped
- 5 button mushrooms, halved
- 25g olive oil
- 25g Butter
- 350g Aborio Rice
- 100g white wine
- 1L chicken stock
- flat-leaf parsley, chopped for garnish

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation
- Place parmesan cheese into TM bowl and grate for 10 seconds/speed 9. Set aside. Wash and dry bowl.
Place bacon and chorizo into TM bowl and saute for 3 minutes/varoma/reverse + soft speed MC off.
Add tomatoes, garlic, chilli, oregano, salt and pepper and simmer for 15 minutes/100 degrees/reverse/soft speed.
Set aside stir through baby spinach and keep warm. Wash and dry TM bowl.
Place onion, zucchini, carrot and mushrooms into TM bowl and chop for 6 seconds/speed 6. Scrape down bowl.
Add oil and butter and and saute for 5 minutes/100 degrees/speed 1 MC off.
Insert Butterfly. Add rice and wine and saute for 2 minutes/100 degrees/reverse/speed 1.
Add stock and cook for 20 minutes/100 degrees/reverse/speed 1.
Pour into Thermoserver and stir through parmesan cheese and arrabbiata sauce and allow to rest for 5-10 minutes.
To serve, place into serving bowl and garnish with chopped parsley.

Tip
I like to get off the bacon and chorizo separately and drain off the excess fat. I then add to Thermomix bowl and make the sauce.
