For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Add besan flour, water, salt and any other optional flavourings to the Thermomix bowl. Mix 10 seconds, speed 4.5.
- Over low heat, melt ghee in a small frying pan. Pour in 2/3 cup of the batter and cover with a lid. When bubbles form and it's starting to set, flip.
- Repeat with remaining batter.
- Top with toppings of choice and finish cooking in the oven.

Tip
Besan flour is made from chickpeas. If you wish to make your own, mill 250g of dried chickpeas on speed 10 for 1 minute.
