Banana, Date & Pecan Bread - Sugar Free - Dairy Free
- 200 grams ripe bananas, over ripe
- 120 grams pitted dates
- 50 grams cold pressed, coconut oil
- 2 eggs
- 1/2 tsp bicarbonate of soda
- 1 tsp baking powder
- 50 grams LSA, Add ground flax to the blend
- 60 grams sunflower seeds
- 180 grams wholemeal self-raising flour
- 160 grams Almond milk, Or other nut milk
- 100 grams Raw Pecans

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Add bananas and dates "Closed lid" , 20 sec, speed 6, scrape down sides.
Add coconut oil and eggs "Closed lid" , 10 sec, speed 3.
Add all other ingredients "Closed lid" , 30 sec, speed 4 (Use "Counter-clockwise operation" if you would like your pecans whole).
Scrape down sides and mix again for 1 secs if needed.
Add to a 20cm square greased cake pan and cook for approx. 45 minutes at 140 degrees fan forced or 160 degrees.
Test with a skewer to ensure all ingredients are cooked.
Allow to cool (if you have will power) and enjoy.
