Date and Walnut Loaf

  • 200 grams dates
  • 100 grams walnuts
  • 280 grams Wholemeal Self Raising Flour
  • 200 grams raw sugar
  • 1 tsp Bi-carb soda
  • 320 grams water
  • 70 grams Butter
  • 4 teaspoons ground cinnamon

Recipe's preparation

    Date and Walnut Loaf
  1. 1. Preheat oven to 180'C. Grease and line a loaf tin.

    2. Add water and butter to bowl. Set temperature to 80'C for 2 minutes, speed 1.

    3. Add flour, sugar, bi-carb soda and cinnamon to melted butter in bowl and mix for 10 seconds, speed 5. Scrape sides of bowl.

    4. Add whole pitted dates and walnuts (no need to chop)

    5. Mix for 5 seconds, speed 5 on reverse.

    6. Pour into loaf tin and bake at 180C for 40-50mins, until skewer comes out dry.

    Smile Made this recipe yesterday. I used brown sugar as did not have Raw. Really a lovely flavour but probably just a little too moist, will use slightly less water next time

    Made this today for morning tea.. It was a hit. I reduced the sugar to 100g and it still was delicious.

    This was so delicious and no-one could tell it was a wholemeal base. I used Rapadura sugar instead of raw and it turned out delicious.
