Sammy's Dixie Chicken

Sammy's Dixie Chicken

  • 600 g chicken breast, diced
  • 3 sprigs parsley
  • 4 clove garlic
  • 1 1/2 tablespoon chicken stock paste
  • 190 g water
  • 60 g white wine
  • 500 g full fat cream
  • 250 g frozen corn kernels
  • 2 stalks spring onion
  • 1 sprig parsley, to garnish
  • 1 --- carrot, grated

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Weigh 600 grams of diced chicken breast in a bowl above the mixing bowl. Coat generously in flour, salt and pepper. Reserve for later
  2. In the mixing bowl add 3 sprigs of parsley and 4 garlic cloves. Blend for 8 seconds speed 5. Use spatula to scrape down the sides of the mixing bowl. Redo if needed for desired result.
  3. Add 1 1/2 tablespoons of chicken stock paste, 190 grams of water, 60 grams of white wine, 500 grams of full fat cream (you could use a can of coconut cream)

    Cook 2 min/100 deg/reverse speed 1
  4. Add reserved 600 grams of seasoned chicken breast. Add all extra flour from the bowl that the chicken rested in. Attach simering basket instead of measuring cup to the lid.

    Cook 10 min/100 deg/reverse speed 1
  5. Add 200 grams of frozen corn kernels, 1 grated carrot and two spring onions.

    Cook 8 min/100 deg/reverse speed 1 with simmering basket on the bowl lid.
  6. Sprinkle with diced parsley and serve with roasted potatoes and your choice of salad.

You may wish to used dried herbs accoring to sesonal avliablity.
Coconut cream works if you would prefer this over cream.
Serve with roasted potatoes and your choice of salad
(I coat my potatoes in flour and salt and pepper then roast)
