Ingredients
Lemon Brownies
- 227 grams unsalted butter, melted
- 300 grams sugar
- 2 eggs, large
- 2 tbsp lemon zest, grated, about 2 lemons
- 85 grams lemon juice, fresh
- 188 grams plain flour
- 0.5 tsp salt
- 0.5 tsp baking powder, for a slightly cakier texture, optional
Lemon Glaze
- 120 grams icing sugar
- 2 tbsp lemon juice
- 1 tsp lemon zest, grated
- 1-2 tsp Milk, if needed, for thinning

- Preheat oven to 175°C. Line a 20x20 cm baking disk with baking paper or grease lightly.
- Place butter into bowl and melt for 3 minutes at 60°C on speed 1. Check that the butter is completely melted, if not, melt for a further 30 seconds.
- Add sugar and mix for 2 minutes on speed 3. Add eggs, lemon zest and lemon juice, mix for 20 seconds at speed 5. Mix for a further 10 seconds if required - should be smooth texture.
- Add flour, salt and baking power (if using), mix for 15 seconds at speed 5. Mix for a further 5 seconds if required - ingredients should be just combined. Do not overmix.
- Pour batter into prepared tin and smooth the top. Bake for 20-25 minutes, or until the centre is set and the edges are lightly golden.
Let cool completely in the pan. - Add icing sugar, lemon juice and zest to bowl. Mix for 15 seconds on speed 4. Scrape down sides, add a few drops of milk if required. Mix for a further 10 seconds on speed 4. Check consistency - pourable consistency - add additional drops of milk and mix as required.
- Pour glaze over cooled lemon brownies and spread evenly. Let set for 20 minutes, then slice into squares.
