Caramelised Onion & Porcini Butter

Ingredients

380 g

Flavoured Butter

  • 600 grams Cream, Chilled
  • Cold Water for Rinsing
  • 20 grams Dried Porcini Mushrooms
  • 1 Brown Onion (100-130g), quartered
  • 6 Cup Mushrooms
  • 30 grams Oil (I used Rice Bran)

Recipe's preparation

    Flavourings
  1. 1. Place Dried Porcini into TM bowl. Mill 15sec/Speed 8.

    2. Set aside.

    3. Place Onion, Cup Mushroom and Oil  into bowl. Chop 3 sec/Speed 4, then scrape bowl bowl. Saute 25 mins/Varoma Temp/Reverse/Speed Soft with MC off.

    4.Set aside and clean bowl.

     

  2. Butter
  3. 1. Place Butterfly into TM bowl.

    2. Add Cream and blend for up to 4 mins/Speed 4, until separated.

    3. Once separated, strain the buttermilk out of TM bowl. The strainer basket can be placed in the TM bowl to ensure the butter does not escape.

    4. Wash the butter with approximately 200g cold water. Empty water from the TM bowl. Repeat this washing process until the water runs clear.

  4. Flavoured Butter
  5. 1. Leave the strained butter in the bowl.

    2. Add Porcini Powder and the Mushroom and Onion mix to the TM Bowl.

    3. Blend 10 sec/Speed 5. Scrape sides of bowl. Blend 10 sec/Speed 5. Voila! Delicious butter at your fingertips!

  6. Storage
  7. Keep a small amount in the fridge.

     

    Place remainder of mixture onto baking paper and roll into a log. Place in freezer. Cut rounds of butter whenever you need some extra flavour (and butter) to your dish.

Tip

This butter can be used in so many recipes. It intensifies already existing mushroom flavours, and can add a new depth to other dishes.

 

I served it on top of bite size fillet mignons (steak wrapped in Bacon), which I pan seared and then placed in a hot oven for 10 minutes, or steam on the varoma for 18 mins after pan searing.

 

There are so many recipes that you could substitute normal butter for this butter. Here are a few:

-Mushroom Risotto (EDC)

-Mushroom Sauce (EDC)

-Beef Stroganoff (EDC)

-On a steak

-Gnocchi with Burnt Butter Sauce

-Tossed through varoma steamed vegetables
