- 8 lemons, you will need the peel of 4 lemons (use a vegetable peeler) and the juice of 8. If using limes you will need 12

- 400 g unsalted butter cubed

Recipe's preparation
Place lemon peel and half of sugar into TM Bowl mix on speed 9 for 20 seconds
Add remaining ingredients, mix on speed 6 for 5 seconds
Set timer for 14 minutes, 90* temp and speed 4
Time will vary depending on temperature of ingredients – basicly - it will be thick and shiny looking (this indicates that it will set) if it has not thickened up, you need to give it more time at 90*/ speed 4 – another 2-3 minutes can make all the difference!!
Pour into warm sterile jars.Seal and keep in the fridge. Will keep for 6 months in the fridgeTry using limes or lime and passionfruit (add passionfruit pulp in after mixing on speed 6 and stir using reverse blade) lemon lime is nice too!!
This makes approx 2 litres which is 8 x 250g jars

Seriously yummy lemon curd. Do you need to let it cool in the jars before you put the lid on. With jam you can 'seal' it while it is hot but not sure with the lemon curd. Thank you

Lemon curd intrigues me.......some recipes say that its able to be stored for 3 weeks and yours is 6 months. What makes it shelf stable for so long? I would love any information to help me understand it!!!!!

Hi - I don't know is the answer. I just have never risked it as it does have eggs and butter in it. I did google this question though and as long as your jars and lids are sterile, alot of websites say that you can keep in a dark cupboard for 12 months. I am no food scientist, so I will still keep mine in the fridge. But i hope this info helps you.

Can these be stored in cupboard? It's a huge batch to store in fridge... I will be giving them away as gifts over Xmas but not sure about when I will be seeing everyone, we have a small fridge.

Hi Tegan,
You can store the curd in sterile jars (clean jars that have been put in a moderate oven 160*c for approx 10 minutes or until no evidence of water in them) for the lids make sure that you use lids that have a rubber ring inside as this will create a vacumm when the curd cools. I pour boiling water over clean lids then drain to sterilise them - cant put these in the oven as the rubber will perish. Curd will keep in the fridge (must be in fridge) for about 6 months!
So what to use the curd for - you can make little pastry shells with a rich shortcrust pastry (look at my caramelised leek and goats cheese tart pastry and add 30g caster sugar to the pastry recipe with flour at the start and you will have a sweet rich shortcrust pastry) follow same instructions for resting rolling etc. then you can roll little tartlet cases ie. a patty tin with 12 little scooped rounds - just put a fork in the pastry before you blind bake it. These will keep in an air tight container for at least 2 weeks in the pantry. Then fill these little shells with a spoon of lemon or lime curd yummmmm. If you want to make these more special - make some baby meringues that once cooked on baking paper can sit on the top of the curd and you have mini lemon meringue pie. Curd is nice on hot toast, fresh crumpets, scones etc. Also it is nice mixed with whipped cream and put on top of a pavlova. Lovely to give a gift in a jar too. It is best not to put the curd in the oven - best eaten cold in a cooked pastry shell. They are all the things I do with lemon or lime curd. I am sure there are lots more ideas out there though.

Hi I am estimating approximately 360g of juice (based on another recipe i use lemon juice in) would be about the juice from 8 lemons. This really needs the lemon zest in it, so fingers crossed you have some of this. It is awesome and so simple! enjoy
