Lime, Coriander and Chilli Butter

Ingredients

Butter

  • 600 grams full fat pouring cream (whipping cream)
  • 500 grams chilled water

Lime, Chilli and Coriander Mix

  • 1 --- Fresh lime
  • 6 sprigs fresh coriander, or more dependent on your own taste
  • 1 dried red chilli, or 1 long red fresh chilli (with seeds)
  • salt to taste

Recipe's preparation

    To Make Butter
    1. In a clean dry TM bowl, insert butterfly.
    2. Place cream into bowl and whip 2 minutes / speed 4 or until solids and liquid separate.
    3. Remove butterfly
    4. Using the TM basket strain liquids, reserving buttermilk for later use if desired (a few suggestions for buttermilk use include Scones, Bread rolls – check the EDC or the recipe community, just delicious – my work colleagues attest to this!)
    5. Place chilled water over butter solids in TM bowl and mix 5 - 10 seconds / speed 4. Liquid and solids will again separate.
    6. Using the TM basket , strain liquid from solids again so that only butter remains. 
    7. Set butter aside in TM basket.
    8. Wash and dry TM bowl
  1. Lime, Chilli and Coriander Mix
    1. Peel 1 lime leaving as much white pith still on the lime – just get the outer zest skin if you can, you will have a nicer flavour.
    2. Place lime zest in clean dry TM bowl and mill  for 10 seconds/speed 8.
    3. Then add 4 sprigs of coriander, 1 dried red chilli or 1 long fresh red chilli, pinch salt. Mix for 5 seconds / speed 8.
    4. Note: If you prefer  ‘chunkier’ bits of coriander – feed through top of lid when TM is running for last couple of seconds.
    5. Place prepared butter in TM bowl with blended ingredients. Mix for 20 seconds,  on REVERSE Counter-clockwise operation speed 4.
    6. Remove mixture from bowl and place on baking paper and roll into a log. Chill for later use.

    Can be frozen and sliced and then used as required.

     

  2. This Butter is delicious with
    • Corn on the cob – especially when you are barbecueing
    • Stirred into freshly cooked pasta with calamari, or chicken, or smoked salmon – it just melts and infuses the beautiful flavours into the dish.
    • Gorgeous over freshly cooked prawns
    • Served on a Surf and Turf
    • Make a Bruschetta type entrée with the bread being spread with this butter, then topped with halved cherry tomatoes and drizzled with Balsamic dressing. (I tried this dressing last week and it was very nice //www.recipecommunity.com.au/recipes/basic-salad-dressing/115173 )

    Note: I put very little salt IN the butter as I will be seasoning the item I am serving the butter with eg the Pasta with Calamari

  4. Instead of using Coriander - try using 1cm piece fresh ginger or a few fresh chives
