      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add Butterfly whisk to bowl
  2. Add butter, sugar and lemon juice Mix for 2 minutes at 80 degrees C at speed 2.5
  3. Mix again for 12 minutes at 80 degrees C at speed 2.5, adding eggs through the lid in the first minute or two of this step.
  4. Pour into air tight jars and store in refrigerator (if you can resist eating it)

Tip

Check that the mixture is cooked by placing a spoon in, checking that it covers the spoon without dripping off when it is removed. Add a further 2 minutes cooking time if needed.
Passionfruit juice/pulp can be substituted for lemon juice to make passionfruit butter.
Depending on the availability of ingredients, I often double the amounts.

    I used myer wonder lemons because I dont have eureka lemons at hand. Eureka has a much more zesty flavour in my opinion.
