Ingredients

Sunflower Seed Pate

  • 270 g sunflower and/or pumpkin seeds, (soaked 2-4 hours)
  • 1/2 Cup Fresh Basil leaves
  • 1 clove garlic, peeled (or 1 tsp dried garlic)
  • 1 tsp ginger powder
  • 1 tbsp hulled tahini
  • 1 juice of 1 lemon
  • 1/2 tsp Himalayan salt
  • 1 pinch Cayenne Pepper (Optional)
  • 2 tbsp olive oil

Recipe's preparation

    Sunflower Seed Pate
  1. 1. Soak seed 2-4 hours

    2. place garlic in mixing bowl and chop 3 sec/speed 7

    3. place rest of ingredients in mixing bowl and blend 5 sec/ speed 8. scrape down sides of the bowl

    4. blend for another 20 sec/speed 6. Depending on the consistency you would like to achieve, you can blend a bit longer or even add some water or extra oil to get a thinner spread, rather than a thicker pate.

Tip

* Add other fresh or dried herbs to your liking: sage, thyme, rosemary or tarragon for example

* use the pate in a lettuce leave or seaweed wrap with vegies as a super healthy lunch, or as a dip for vegies or spread for crackers.
