Sweet Chilli, Mango Mayonnaise

Ingredients

0 portion(s)

  • 1 mango, removed from skin, stone removed
  • 220 g whole egg mayonnaise, from EDC. (I make mine with garlic, dijon mustard, lemon juice & rice bran oil.)
  • 1 tablespoon Sweet chilli sauce
  • 1 tablespoon lemon juice, (about half a lemon)
  • salt & pepper

Recipe's preparation

  1. Put mango into TM bowl and blend for 15 seconds on speed 6.
    Add mayonaise, sweet chilli, lemon juice and salt & pepper and blend for 10 seconds on speed 3.
    Serve with prawns or chicken tenderloins.
    Perfect amount for 2kg of prawns.

Tip

    Well I made this exactly to the recipe and it went like liquid. I made the mayonaise from the ED cookbook and it turned out beautifully (used roasted garlic). When I added the ingredients to make this mago mayoinaise, it turned out runny. Not sure if it was because it was a large mango, however I would suggest if you are making your own mayonaise, to refridgerate for several hours before making this recipe. Other than that it tasted great.

  • I decided to cook this up to

    I decided to cook this up to put some life back into leftover 'Chicken and Cashew' from the EDC. The olive oil I used in my EDC mayo was too strong, so I ended up making the mango mayo with it, then putting it in a frypan to boil out some of the oil. I put the Chicken and Cashew in as well and it made an amazing stirfry sauce! Wasn't what I had planned, but still delicious. WIll definitely try this recipe again with a different oil tmrc_emoticons.)

    I make the Edc mayonnaise recipe then add 1 drained can of mango slices and some mint before blending for another couple of seconds. Delicious.

    I use the recipe from the EDC with a garlic clove, then the whole egg at the start and the rest of it. So lemon juice instead of vinegar, but all the measurements as in there. 250g of rice bran oil. It's never failed. tmrc_emoticons.)

    I'd love get the measurements/recipe of the mayonnaise you make using the rice brain oil.

    I've made the mayo using vegetable oil, it would be nice to try yours, I do use rice bran oil in some of my cooking.
