Vegan Cauliflower Bechamel Sauce

  • 140 g cauliflower, cut into florets
  • 2 tbsp dairy free spread, vegan butter
  • 2 tbsp Flour, Plain, gluten free if desired
  • 60 g Almond milk, or other non-dairy milk
  • 1 tbsp stock paste
  • 1 tbsp savoury yeast flakes, Nutritional yeast

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place cauliflower into TM bowl & tubro pulse 3-4 times. Scrape down sides of bowl. Add butter and cook for 12 minutes, 100 deg, speed 1. Add remaining ingredients, salt and pepper to taste. Blend for 30 seconds, speed 7, or until smooth.
    If sauce is too thick, add a tablespoon of milk or water at a time & blend until desired consistency.

    This was perfect with vegetarian lasagne recipe!!Smile
    Thought it tasted too salty as a sauce on its own, but just perfect once added to laszgne layers.
    Did have to add more soy milk, maybe another 3 tablespoons to make it a little runnier and easier to work with.

    Thanks for the recipe, i used this last night in lasagne. I doubled the recipe and found i did have to add a bit more milk to make it more smooth and runny.
