  • 150 grams Butter, Unsalted
  • 1 teaspoon sugar raw
  • 2 onions, Large sliced thinly
  • 6 potatoes, Desiree
  • 500 grams chicken stock (salt reduced)
  • salt and white pepper, To taste

Recipe's preparation

    Potatoes
  1. Melt 100 grams of butter in TM bowl. Add thinly sliced onions and sugar, cook for 6 minutes Counter-clockwise operationat 60 degrees then increase temp to 100 for 18-20 minutes. Set aside. Do not wash bowl. Season to taste with salt and white pepper.  Thinly slice potatoes with a mandolin 3-4mm thick and place in a greased baking dish in a single layer then scatter with some of the onions. Repeat layers finishing with potatoes. Season lightly between layers if desired. Pour stock into TM bowl and bring to boil speed 2. Carefully pour over potato slices,should just cover, then dot with rest of butter. Place in oven 180 degrees for 50-60 minutes or until tender.

Tip

Fan forced oven temp could be lowered by 10 degrees
